{"id":5779,"date":"2024-04-12T10:20:04","date_gmt":"2024-04-12T08:20:04","guid":{"rendered":"https:\/\/www.anaplesec.com\/?p=5779"},"modified":"2024-05-02T14:22:38","modified_gmt":"2024-05-02T12:22:38","slug":"vegetarian-shepherds-pie-for-the-luteal-phase-of-your-cycle","status":"publish","type":"post","link":"https:\/\/www.anaplesec.com\/en\/vegetarian-shepherds-pie-for-the-luteal-phase-of-your-cycle\/","title":{"rendered":"Vegetarian\u00a0 Shepherd&#8217;s Pie for the luteal phase of your cycle"},"content":{"rendered":"<p><strong>Food and nutrient focus for the Luteal Phase:<\/strong><\/p><ul class=\"wp-block-list\"><li>Minerals<\/li>\n\n<li>Vitamin B6<\/li>\n\n<li>Fiber<\/li>\n\n<li>Anti-inflammatory foods<\/li>\n\n<li>Magnesium<\/li>\n\n<li>Complex carbs<\/li><\/ul><p>This Shepherd&#8217;s pie ticks off all the boxes for what we need in our luteal phase!<\/p><p><strong>Prep Time:<\/strong> 20 minutes<br><strong>Cook Time:<\/strong> 25 minutes<br><strong>Total Servings- 6-8<\/strong><\/p><p><strong>Ingredients:<\/strong><\/p><ul class=\"wp-block-list\"><li>2 sprigs fresh rosemary or 1 tablespoon ground<\/li>\n\n<li>6 medium potatoes<\/li>\n\n<li>\u00bc-1\/2 cup of non-dairy milk<\/li>\n\n<li>2 tablespoons grass-fed butter<\/li>\n\n<li>6 cups of your favorite vegetables.&nbsp;<\/li><\/ul><p>(The beauty of this recipe is you can use what you have in the fridge. Broccoli, cauliflower, cabbage, zucchini, carrots, kale, and chard, all work wonderfully! If you\u2019re in a pinch for time use frozen organic veggies.)<\/p><ul class=\"wp-block-list\"><li>2 teaspoons avocado oil<\/li>\n\n<li>3 cloves minced garlic<\/li>\n\n<li>1 chopped onion<\/li>\n\n<li>2 packs or cans of tomatoes or home made capsicum sauce<\/li>\n\n<li>2 cans of kidney beans&nbsp;<\/li>\n\n<li>Salt and pepper<\/li><\/ul><p><strong>Instructions:<\/strong><\/p><p>Peel and cut potatoes into quarter pieces. Boil for 30 minutes until water. Potatoes are ready to mash when you can stick a fork inside and they are soft.<\/p><p>While the potatoes are boiling, cut and prepare veggies. Steam for 10-15 minutes.<\/p><p>Pour avocado oil into a large frying pan on medium heat<\/p><p>Add onion and garlic to the pan. Add salt and pepper and cook until soft.<\/p><p>Add two packs of canned tomatoes. I like to use capsicum. Add more salt and pepper to taste.<\/p><p>Add two packs or tins of kidney beans and simmer for a couple of minutes.&nbsp;<\/p><p>Add rosemary and let simmer for another minute<\/p><p>Line the bottom of a large casserole dish with the steamed veggies.<\/p><p>Cover with tomato\/capsicum mixture&nbsp;<\/p><p>Mash the potatoes, non-dairy milk, butter, salt, and pepper into a bowl until creamy.<\/p><p>Spread mashed potatoes evenly on top of the contents in a casserole dish.<\/p><p>Cook at 375 degrees F until potatoes are golden brown. Approximately 25-30 minutes.<\/p><p>Serve hot. Keep leftovers in the fridge.
